Ingredients
- 1 whole beef tenderloin, trimmed
- 3 tablespoons canola oil
- Kosher salt, to taste
- Coarsely ground black pepper, to taste
Directions
- Preheat your smoker to 250 degrees and let your tenderloin come to room temperature.
- Rub the oil onto the meat and GENEROUSLY season the beef with salt and pepper.
- Place the seasoned meat onto the smoker and cook for one hour, or until you have an internal temperature of 110 degrees.
- Let the meat rest and raise the temperature of your grill to 500 degrees.
- Place the meat back onto the smoker and cook until you have an internal temperature of 130 degrees.
- Remove meat from heat and let rest for 20 minutes.
- Slice, serve and ENJOY!
