Ingredients
- 1, five pound whole beef strip loin
- 2 tablespoons canola oil
- Kosher salt
- Ground black pepper
Directions
- Let your strip loin set out at room temperature for one hour.
- Preheat your smoker to 275 degrees.
- Coat the strip loin evenly on all sides with the canola oil.
- Liberally season the loin, on all sides, with the salt and pepper.
- Place the seasoned strip into the smoker for 1.5 hours or until you have an internal temperature of 110 degrees.
- Remove from the smoker and let rest for ten minutes.
- While the beef is resting, heat a cast iron skillet on the stove until searing hot.
- Place the rested beef into the skillet and sear 3-4 minutes on each side.
- Remove from the skillet and let rest for another ten minutes.
- Slice, serve, and ENJOY!
