Reverse Sear Standing Rib Roast

Ingredients

  • One, 4 bone standing beef rib roast
  • 2 tablespoons oil
  • Kosher salt, to taste
  • Ground Black pepper, to taste

Directions

  1. Let your roast sit out for one hour to come to room temperature.
  2. Preheat your smoker to 275 degrees.
  3. Rub the roast with oil, and GENEROUSLY season all sides with salt and pepper.
  4. Place the rib roast into the smoker until you reach an internal temperature of 110 degrees.
  5. Remove from smoker and let rest for 20 minutes.
  6. Heat your Primate griddle, or cast iron skillet, until hot.
  7. Add oil and sear the meat on all sides.
  8. Remove from the heat and let rest for at least ten minutes.
  9. Slice and ENJOY!
