Ingredients
- 1 two pound beef petite beef tender filet
- 6 slices bacon
- Kosher salt, to taste
- Ground black pepper, to taste
Directions
- Let the beef sit out for one hour and come to room temperature.
- Preheat your smoker to 250 degrees.
- Season the beef with salt and pepper.
- Wrap the seasoned beef with the bacon and place on the smoker.
- Cook until you have an internal temperature of 135 degrees.
- Remove from the smoker and let rest for 20 minutes.
